If you know me at all, you know my love of mexican food, tequila and pretty much anything that can go on a tortilla chip. While we were in Asheville a few weeks a go, we found this heavenly place, while we were shopping. It was a LOT colder than we were expecting and after one shop and a very windy walk to the next, we decided to get lunch instead! Chips and salsa for the win. Always! 

Inside The Cantina was beautiful and eclectic, like most things in Asheville. It's one of those restaurants that you want to try over and over so you can taste everything on the menu, but then you never change your mind because the first thing you eat is too good to pass again. I got the pork enchiladas with a creamy cilantro sauce that was the perfect amount of spicy. It will definitely be hard to pass up that meal ne We also got the cheese dip which came with chips and two kinds of salsas. The verde was my favorite, which is normally the case. Spicy tomatilla gets me every time, just like a spicy margarita, which was also delicious. 

All the sides sounded great but the coconut rice (rice cooked in coconut milk and sauteed veggies) was so good!! The brussel sprouts were also cooked to perfection. Mmm, I always hate doing these posts when I can't drive to the location to enjoy a meal and a drink again. We will be going back to Asheville in the spring (if not before then) and this spot is definitely on the list. I'm dying for Peter to try it!!

Sick Littles.

To be completely honest with you, the past two weeks have been terrible. Finally, on Wednesday of last week I started to feel like myself again. My nose wasn't constantly red from tissues and I slept through the night for a couple of nights in a row. Both of those things are important and make me a much happier person. But, like always, when I'm having a string of crappy days, I try my best to find the happy in them. I work hard to keep a smile on my face even when I want to curl up in the bed and hit snooze all day long. Here are a few of the little things that kept me going……

the way that Peter can make me laugh till I cry, even when I feel like I might cry from feeling like crap – yes, that is a gift // the massive amounts of hot tea that I have consumed lately // gilmore girls and how watching that show always makes me think that I'm funnier because I pretend that I can talk fast and be witty like Lorelei Gilmore, if only I could pull it off // the slow season at work which made the whole "working while almost being dead" thing a lot easier // finally finding the energy to clean the house and finish decorating // a lot of lunch dates with people I love during the holiday season, especially a sushi lunch date with my Mom

Back to the regular blogging this week, thank goodness! I've missed it!!

Free burgers and fries are kinda awesome.

A few weeks ago a coworker of mine sent out an email explaining how we could win a “Fudd Friday” by entering a contest with B93.7. We all took a few seconds to vote and crossed our fingers that we would win. Last week we got a phone call with the exciting news so on Friday we got to enjoy the Fudd Bus! We stuffed our faces with some yummy burgers and fries from Fuddruckers and then spent some time bowling for prizes!

It was the best way to spend a fun hour on a busy Friday!

I’m so glad I love the people I work with…

it definitely makes every day feel a little less like work.

The rest of the weekend was spent in Atlanta with Peter’s family.

His brother turned 31 and with their first baby on the way we spent a lot of time discussing names,

feeling all kinds of kicks (that kid is getting strong!)

and painting his future room! 

I failed miserably at taking any pictures this weekend except for this one special shot.

Not sure how I feel about it…. But he sure is cute. ;)

Lots of food and a hike

Some Saturdays are perfection and over the weekend I had a perfect Saturday!

I woke up in a happy mood since I knew I was spending the whole day with the Boyfriend... 

those days are the best. 

We went to the mountains to have some lunch at Victoria Valley Vineyards and enjoy some wine tasting then we took a little hike at Table Rock. The weather was so wonderful, warm with a cool breeze. 

On Saturday night we had a little date night at Nantucket. I've been wanting to try this place for a while now and since I was craving some seafood it was the obvious choice!

and a lot of laughs with my man.

Sunshine + Surprises!

This weekend was simply wonderful and I can’t wait to share some of the pictures from Jocie’s Shower but more on that later this week…

Friday started my weekend off on the right foot for sure!

All last week we had “Employee Appreciation Week” at work and I helped my co-worker with the “Appreciation Planning” which of course meant we knew everything that was going to be given out. 

One of my most favorite things to do is plan surprises! Love them!!

I also love receiving surprises even more so it was super sweet to be given a gift card from my boss for all the planning. I really do have the best boss!

Every day last week everyone in my department got a little $5 gift card 

(coffee, ice cream, food) 

and on Friday we received one for Soby’s on the Side. 

YUM! It was the perfect idea since they have a Four Dollar Friday deal every week!!! CHA-CHING!

So, on Friday it was a perfect sunny day to take a little stroll down to Soby’s on the Side for some free lunch and it was delish!

I love downtown Greenville and I am so happy I get to work in the beautiful area on a daily basis; it really is such a blessing!!

Memorial Day Lunch Date!

As I have mentioned before lunch dates are one of my most favorite things and when I get to enjoy them on a Holiday with my favorite man it’s most definitely wonderful!

After working a short day at work it was such a treat to walk down to The Velo Fellow for some grub and then wander over to Blueberry Frog for some sweets. It was a great afternoon with no plans, just a simple walk to find what our tummies were craving.

I’ve been to Velo a handful of times but I’ve never had any food and neither had Boyfriend.

Gladly, we were both pleasantly surprised.

Since I’m such a planner I may have found my Birthday Dinner Spot for my 26^th.

{even if it isn’t till next February…}

If you are a fan of Pimento Cheese you must go try theirs. 

It could be my new favorite cheesy find since they add a little kick of garlic! YUM!

So happy it was a beautiful day with sunshine, yummy food, cool drinks and quick naps!

Little Lunches

Lunch dates are one of my favorite things!! I usually keep my lunch schedule pretty busy between my mom, girl friends and the man when he is home so between 12-1 PM on Monday-Friday my time is happy! This week I got to have some yummy lunch at Luna Rosa in downtown Greenville with two of my favorite ladies... Girl time is a necessity and I'm so glad I get to spend some of it when Katie and Jessica. 

The day before Friday

Today is Thursday which makes me feel all sorts of happy inside! Yes… all sorts!

I took this picture while I was taking a little walk outside to meet my beautiful friend Katie for lunch. Sadly Jocie couldn’t come because of wedding planning and then I found out that she COULD come but she got her days confused. Tragic.

You see, it’s hard for the 3 of us to find time together. We are constantly trying to squeeze in some lunch, or a happy hour or maybe a weekend brunch and movie but something always gets in the way. Even confusion with what day of the week it is.

We missed you, Jocie… and just so ya know, it’s Thursday. Tomorrow is Friday. And yes, I am pretty darn happy about it!
